In the process we also found a good use for the Scottish apple mountain! This subtle vinegar infusion of hand picked apples not only dresses salads with ease, but makes a most refreshing Summer drink with sparkling mineral water and ice. Our News: Can you believe we are nearly in June? May has seen some wonderfully successful Demijohn events, that although small have been perfectly formed! The month started with a lively Corporate Tasting Evening at the formidable Maclay Murray and Spens Solicitors Scottish Headquarters in Glasgow. I was asked to assist with entertaining some of their private clients with a talk on some of products before they sat down to dinner. It was a pleasure to do and I met some extremely enthusiastic and knowledgeable people. In the middle of May my sister, Emily, threw me in at the deep end with an impromptu tasting evening for her work colleagues from the famous Danish oil company Maersk in Edinburgh. 7 wonderful guests were introduced to the world of Demijohn in just over an hour before heading for a large supper in the New Town. Such was their enthusiasm for us I had to deliver their shopping by van to their table! A great evening. The end of the month took me to North Yorkshire and the architecturally charming Hovingham Hall to exhibit at a charitable fair in aid of the Army Benevolent Fund. Not only did we meet some wonderful Yorkshire folk, I discovered a new bit of the country and over £16,000 was raised for the charity. But May has not just been about events. It has been a technological overload! I have never claimed to be an IT whiz, far from it. Yet somehow I am driving forward our new secure Protx online payment system that should be in place and working within the next few days, our new newsletter format with reduced file size which will appear, next month and pushing on fast with delivering our new website. Our new site will hopefully be significantly easier to use than our current site which is curling at the edges! We have had many very useful ideas from customers over the last 2 years, but if you are bursting with ideas of how you would like our site to run I urge you to let us know, as now is not too late. Understanding that IT is not everything, Frances has been photographing at a speed that would make the paparrazi gasp, for our 2007 catalogue that will be ready in a few weeks time. New Products
Our Apple Vinegar seems a perfect match to dress salads with our 2 current single Estate Extra Virgin Olive Oils, Villa Montalbano and Kabbadates. It has also proved a great addition to sauces, gravies and marinades, especially for pork dishes when a little zing is needed. We are still experimenting, but if you have any ideas please let me know. Finally, we have a very handsome new 700ml bottle called Cubana now in stock. A good manly shape of bottle. Coming Soon: A new whisky and some new 100ml and 500ml bottles to put it in. More in my next letter.

Forthcoming Demijohn Events
We will be exhibiting at Gather, Ruthven Lane, just off Byres Road in aide of the Erskine Hospital between 10am to 4pm on Saturday 16 June 07. We will also be at the Scottish Game Fair at Scone again this year between Thurs 28 June to Sun 1 July 07.

Staff News
Sadly we said goodbye to Lynda Sirel at the end of April, who helped us launch our new Glasgow shop last year. Knowing how enthusiastic she is about us I am sure we have not seen the last of her! As of yesterday however her gap has been filled, as we have 3 new enthusiastic members to the Glasgow team who you may see training with L plates throughout June. Please go easy on them! Greg Muir, a recently graduated Law Student from Glasgow University, and Zofia Sagan and Jack O'Brian both of who are undergraduates at Glasgow Uni. Welcome all.
