QuestionHow is this made?
The Bullace, or Wild Damson, is a globular, fleshy fruit, marked with a faint suture, has generally a black skin, covered with a thin bluish bloom, and is similar to the Sloe, but larger, often an inch across, and drooping from its weight, not erect as the Sloe. Occasionally yellow varieties are found. All Colin and Phyllis Hingston’s fruit gins are based on a family recipe dating from 1842 and they have developed it to include this marvelous whole fruit gin. . It was their homemade fruit gins that inspired Colin and Phyllis to sell up their former business, a successful Deli, in favour of making liqueurs. After handing out their homemade fruit gins to their then customers at Christmas, they realised they had a growing demand that needed to be satisfied. They sold up the Deli and now make a number of wonderful liqueurs including the delightful Blackcurrant Gin and delicious Seville Orange Gin which we also stock. http://www.cottagesmallholder.com/?p=37

Tasting Notes
This is another wonderful liqueur produced by Colin and Phyllis Hingston on their Farm in Worcestershire. We are excited about its arrival as we believe it to be the only Wild Bullace fruit liqueur in existence. It has a Damson like fruity taste, with a very slight bitter twist and pleasant dryness ....more to it, similar to that of a Sloe Gin. Wild Bullace is a little known, naturally occurring, British hedgerow fruit that belongs to the plum family. Bullace just happened to grow in abundance on the neighboring farm to the Hingstons and they were offered a chance to make best use of it. Always up for a challenge they let us try their experiment and we immediately recognized its potential. It will certainly be one for the more savy liqueur drinker or cocktail connoisseur, and I can see it delighting Sloe Gin fans.
