Our Damson Vinegar is made by Lin Whitehead in Warwickshire. Lin started making vinegars and other preserves in 2004 with her help from her Husband Paul. But it was through one of our other producers, Colin and Phyllis Hingston from Worcestershire who make some of our fruit gin liqueurs and who are good family freinds with the Whiteheads, that we first met in 2009. Our Damson Vinegar is made by infusing a large quantity of fresh damson berries in white wine vinegar. Interestingly our Damson Vinegar is made with damsons sourced from Colin and Phyllis's Farm in Worcestershire, showing another great example of happy cooperation between our producers.

Our Damson Vinegar is made by Lin Whitehead in Warwickshire who has worked hard with us at crafting this magical vinegar to an exacting standard of perfection. ....moreIts delicious balance of taste mixes a plummy flavour with a dry taste from the damsons and a distinctive, yet not unpleasant vinegar sharpness. The result is an excellent fruit vinegar, for use on salads or in cooking, that tastes quite unlike any of our other fruit vinegars. Its strength of flavour lends it beautifully to pairing with stronger flavoured foods. Use with a strong olive oil, such as our early harvest of Villa Montalbano Extra Virgin Olive Oil, to make an explosive and exciting dressing for strong flavoured green leaf salads. Add directly into cooking to boost the flavour in sauces, especially when cooking with strong flavoured red meats such as game.
