10 Minute Burrata Starter, a roast tomato and Italian cheese starter recipe

The start of any new year is an opportunity for us all to reset and realign with what is of value to us, whether that is slowing down, making healthier eating choices or a desire to try new things. In early January 2026 one of our Demijohn Team, Flora, created this simple and delicious new starter. Our 10 Minute Burrata Starter, with fresh Extra Virgin Olive Oil and Balsamic Vinegar, may be exactly what you need to start your new year too. It is straight forward to make, healthy and full of irresistible flavour.

Using salad tomatoes in an air fryer is something we highly recommend trying, it is an easy hack for effortless hosting or busy days as it only takes ten minutes. We roasted our tomatoes with our delicious Black Garlic Balsamic Vinegar to create an exquisite blend of sweet and savoury flavours. We were inspired by Jamie Oliver's tomato salad but with a Demijohn twist. Who said that restaurant level meals can't be replicated with an air fryer recipe at home? Not us!

We must give credit to the Italian's for their classic tomato salad with mozzarella. Tomatoes and cheese? You can't lose. We decided to take it up a notch by placing a fresh burrata cheese ball from Puglia in the centre of the tomato salad. Topped with a drizzle of our premium Ponte de Pedra Extra Virgin Olive Oil and a scattering of spring onions, this cool and creamy cheese works immensely well with the contrasting sharpness of the tomatoes and balsamic vinegar.

Pop the tomatoes in your air fryer, wash your dishes or send an email then, bam! Next thing you know, your 10 Minute Burrata Starter is ready for its reveal to enjoy with fresh bread for dipping.

Ingredients (to serve 4):

Preparation:

Roast the Cherry Tomatoes with Black Garlic Balsamic Vinegar for 10 minutes in an Air Fryer at 200 degrees Celsius, or on a baking tray in a 180 degree fan assisted oven.

To serve, place the hot roasted tomatoes in a stoneware dish with the cold burrata in the middle. Add salt and pepper to taste, and then sprinkle a few chopped spring onions over the top and finally dress with fresh Ponte de Pedra Extra Virgin Olive Oil and a little more Black Garlic Balsamic Vinegar.

Eat with really good bread, such as ciabatta or sourdough, dipping the bread into the dressings to soak up all the delicious juices from the tomatoes, balsamic vinegar and olive oil. Nothing should go to waste!
